Simple Soup with Tarragon, White Beans. Greens and optional Chicken Meatballs
I decided to make a base soup of just celery, onion, garlic and carrot. To this I added tarragon, white beans and any greens of your choice. Adding in chicken or turkey meatballs makes this soup a meal in itself. I love that you can add in just a few vegetables, vegetarian broth, greens and beans and come up with a delicious heart and healthy soup. Enjoy
Ingredients:
1 onion, chopped
3 carrots, scrubbed and chopped
3 celery stalks chopped
2 cloves garlic chopped
5 cups vegetarian broth
1 cup trimmed and washed greens,( kale, spinach or Swiss chard)
1 tablespoon tarragon
salt and pepper to taste
1 15 oz can organic cannellini white beans, drained and rinsed
In large soup pot saute onion and garlic for 5 minutes, add celery and carrots and continue to cook an additional 5 minutes. Add broth, beans and greens. Add salt and pepper and cook on low 10 minutes. Taste and adjust seasoning.
