Vegetable and Pinto Bean Soup
Putting together the fresh vegetables you have on hand and adding a can of beans makes for a simple, healthy and delicious soup!
In large soup pot add:
Ingredients:
1 Onion chopped
2-3 cloves Garlic chopped
3-4 stalks celery chopped
3-4 carrots chopped
1/2 head or 1 cup Red Cabbage chopped
3-4 large tomato chopped
1 can rinsed Pinto beans
1/2 teaspoon red pepper
salt and pepper to taste
5 cups distilled water
large handful or 2 cups Spinach, add to soup at the end
Cook until carrots are soft about 20 min and you have yourself a pot of healthy and delicious soup!
