Watermelon Gazpacho with Feta and Mint
Watermelon Gazpacho is so fun! The color is beautiful, the taste refreshing and what a great summer no cook soup. Besides doing some chopping this is as simple as can be. Enjoy!

Ingredients:
1 small to medium watermelon seedless, chopped to about 6-7 cups
reserve 1/2 cup chopped watermelon for topping
2 cups chopped tomatoes
1 red or orange bell pepper chopped
1 finely chopped shallot
2 peeled large size cucumbers chopped, reserve 1/4 cucumber for topping
1 hot or medium heat pepper finely chopped about 1 teaspoon, jalapeno or Serrano
1 large sweet apple, chopped and seeded
1/4 cup plus red wine vinegar
1 Tbsp sea salt
1 Tbsp olive oil
Garnish: Feta cheese, Mint leaves, Avocado, Plain Greek Yogurt, chopped cucumber/watermelon
Directions:
In a blender in batches puree tomatoes, watermelon, chile, cucumber, apple, bell pepper, shallot until smooth. Taste and add vinegar, salt and olive oil. Adjust flavor by adding a little more vinegar at a time until balance of flavor is perfect to your liking. Depending on the sweetness of your watermelon and apple will depend on how much red wine vinegar so don't skip on the taste test! Soup should be put in refrigerator for 1 hour to 24 hours before serving. Serve in chilled bowl with toppings of your choice and a tablespoon of chopped cucumber and watermelon per bowl.
