YELLOW SQUASH AND PEPPER SOUP
Saute shredded carrot and green onons in soup pot. Add 6 cups water. Bring to boil and then simmer.Cook on low until roasted vegetables are done about 45 minutes,
Chop squash ,peppers , carrots, apple and garlic. Season with dill and cumin. Sprinkle with olive oil. Roast at 425 for 45 minutes

3 Yellow Squash chopped
6 carrots 5 chopped, 1 shredded
yellow and red peppers 2 med, 5 small cut in half and seeded
5 cloves garlic peeled
one large red apple chopped
3 green onions, white tops only, chopped
dill 2 T
ground cumin 2 t
salt and pepper
olive oil
6 cups water
Add sliced carrot and green onion, sprinkle with dill to soup pot. cook until soft. Cover with water and let simmer covered. Slice yellow squash, carrots, peeled garlic, yellow and red peppers and put on roasting sheet. sprinkle all vegetables with dill, olive oil and ground cumin. Roast veggies for 45 min AT 425 Add roasted vegetables to soup pot, puree and serve
