YELLOW SQUASH SOUP

Yellow squash is so mellow and neutral. To this soup I paired it with yellow tomatoes but you could use red if this is what your garden offers. There is something fun about matching same color vegetables in your ingredients as they all blend to a beautiful color at the end. I had the end color in mind when selecting the ingredients for this soup. I think having beautiful food on your plate or your bowl is almost as important to the dish being tasty. So have fun in your kitchen and remember to bring tasty and beautiful soup to your table.

Ingredients:
1 onion chopped
2-3 garlic cloves minced
2 carrots chopped
2 summer squash chopped

3 yellow tomatoes chopped (red would be ok if yellow not available)
drizzle olive oil

1/2 teaspoon oregano
salt and pepper to taste

5 cups vegetarian broth
Directions:

Preheat oven to 450 F.

In roasting pan or cookie sheet place squash, carrots and tomatoes with a drizzle of olive oil and roast for 30-40 minutes until brown.

In a soup pot sauté onion and
garlic for 5 minutes. Add roasted vegetables to onion and garlic and mix well. Add broth/water and spices. Simmer for 10 minutes. Remove 1 cup of soup and set aside. Allow remaining soup to cool and puree with hand blender or in a blender. Return blended and non blended soup to pot and heat. Serve warm.
