ZUCCHINI, GREEN BEANS AND CAULIFLOWER SOUP
Another healthy, you can't go wrong because it is so low in calories- soup!
It is such a great idea to make a big pot of healthy soup and then take to work for your eat in work lunches.
It's the end of summer and my summer garden gave the gift of a large zucchini and this inspired this soup. When working with an over sized zucchini you may want to peel it if the skin is tough. A low calorie soup is great if you are getting to your healthy weight. You can have a small serving between meals which is very satisfying or you could have a large portion as lunch or dinner.
Adding fresh herbs at the end of your cooking time adds such flavor to your soups. I used fresh dill for this soup and it is a winner.

Ingredients:
2 medium zucchini chopped (or 1/2 of over-sized) 1 small cauliflower chopped 4-5 celery stalks chopped 4-5 carrots scrubbed and chopped 2 small or 1 large sweet red onion 1 handful fresh green beans,trimmed 1 can 14-15 oz crushed tomatoes or 2 whole tomatoes roasted ground tumeric 1 teaspoon ground cumin 1 teaspoon water or vegetarian broth 6 cups salt and pepper to taste fresh dill to taste, or your favorite herb |

In large soup pot saute onion and celery for 5 minutes. Add carrots. cauliflower, tomatoes, cumin and turmeric cook for 5 minutes on medium stirring a few times. Add broth, zucchini and green beans. Cook until green beans and zucchini are fork tender but not soft about 10=15 minutes.. Adjust your spices adding salt and pepper and a dash more of cumin or turmeric. Taste your soup, add a little spice at a time until perfect to your taste. Add fresh chopped dill to soup and serve. Garnish with fresh dill.
