ZUCCHINI HUMMUS

What is the difference  between garbanzo beans and chick peas?  Nothing!  Chick Pea's are Garbanzo Beans but there are two varieties, the larger size and the smaller. The larger grow in the Mediterranean and North Africa the smaller grow in India, Ethiopia and Mexico.


One of the reasons I want to explore different hummus on this soup website is because I use them instead of mayo or mustard on sandwiches and wraps. And what is better on the side of soup but a sandwich!
Of course hummus is also delicious as a dip for vegetables and pita. So many uses- but don't forget to use it as a healthy sandwich spread. Really great for a vegetarian sandwich with grilled vegetables on your favorite bread. So delicious and so healthy!


Ingredients:

2 medium or 1 large zucchini chopped
1 can organic garbanzo beans drained
1/4 cup Tahini
Juice of one lemon to taste
1/8 cup of extra virgin olive oil as needed for texture
1 garlic clove minced or crushed
1 teaspoon cumin
pinch of cayenne pepper or dash hot pepper
sauce to taste
1/4 cup of greens from top of Fennel bulb or celery tops or parsley, chopped.

Combine all ingredients in the food processor until smooth. Adjust your seasoning to taste including how much lemon juice you want to add. Taste it as you go along and make it perfect for you!

I should have called this Zucchini and Lemon Hummus because the lemon shines through. I used the juice of the full lemon and I added a little lemon peel as well. Adjust the citrus to your taste and enjoy this healthy Zucchini Hummus!
